Vinification: The application of the harvest during the night, when the grapes are at optimum maturity, aims at preserving the potential of each variety. Preimmulatory extraction at low temperature, low pressure and fermentation under controlled conditions help to extract this potential. The wine then remains for 3 months with its sludge, which gives it a volume in the mouth.
Serving recommendations: Its aromatic richness and freshness are highlighted at 9-11 ºC.
